To be completely forthright, we don't drink a great deal of carbonated beverages around here . . . truth be told, my children call carbonated beverages "hot beverages".
Ha! In any case, now and again, I simply get such a solid needing for Root Beer (and Elyse has been having insane pregnancy desires for Root Beer and pizza, so it must keep running in our family!).
I went over these treats and realized that I needed to attempt them. They are too delicate and wet and the icing on top is the thing that makes the treat! - Cookies:
- 1 cup butter, softened
- 2 cups packed brown sugar
- 2 eggs

- 4 cups powdered sugar
- 3/4 cup butter, softened
- 3 Tablespoons milk

- Cookies:
- Preheat oven to 375º.
- In a mixing bowl, cream butter and brown sugar. Add eggs, one at a time, beating well after each addition. Beat in buttermilk and root beer extract.
- Combine dry ingredients; gradually add to creamed mixture.
- Drop by tablespoonfuls onto ungreased baking sheets. Bake at 375º for 10-12 minutes or until lightly browned. Remove to wire racks to cool.
- Frosting:
- In a mixing bowl, combine all frosting ingredients. Beat until smooth.
- Frost cooled cookies.
